When the kids are at home for the summer it feels like they are little baby birds in a nest constantly cheeping to be fed!
No sooner are you done with breakfast and cleaned up they are asking you what is for lunch.

Healthy Zucchini Muffins
I make these at least once a week. They are packed full of zucchini and the maple syrup in them makes them super delish.
I grate the zucchini in my food processor so it takes me less than a minute. Hand grating take for-evah and no one has time for that.
This recipe makes 12 so you can keep them for a few days and it’s the most lovely thing to have lunch already made and done.
They are also perfect for picnics.
